Though asparagus season here is coming to an end, I am still finding a way to work it into pretty much everything from omlettes to soups to salads. This time, I threw together some of the items I had into a side dish which I am calling a salad. Measurements are not important here.
Roast asparagus at 190 degrees C for 7-9 minutes depending on the thickness. They should still be firm.
Wash and dry rocket/arugula and place on the bottom of your plate or platter. Dress with olive oil and lemon if desired.
Top bed of peppery rocket with asparagus and top with gruyere, a soft goat cheese or any other cheese on hand.
Salt and pepper to taste.
