Marlin with Citrus Herb Sauce
400g Marlin (swordish or tuna will work as well)
2 tbsp Basil, chopped
1 tbsp Mint, chopped
1 garlic clove, minced
2 tbsp olive oil
Juice of Large Orange
Salt and freshly ground pepper, to taste
Mix ingredients for sauce together whisking to form sauce. Put a small amount on fish for about 10 minutes.
Heat grill or grill pan. Cook marlin on medium heat for 2-3 minutes on each side until done. Pour additional sauce on fish to serve. Enjoy!
