Is anyone else sad to see the summer go? Ever year just before the summer weather ends, I have the desire to make a big pot of fresh tomato sauce. Sometimes, I make enough for a meal and other times, I make enough to freeze for a year! I stocked up on fresh tomatoes from Nigel’s stand at the London Farmers’ Market and roasted away.
1 kilo tomatoes, halved horizontally
3 onions, cut in 6 pieces (I use a mixture of red and white onions)
10 garlic cloves, unpeeled
3 tbsp, oregano
2 tbsp, basil
4 tsp olive oil
Salt and pepper, to taste
Preheat oven to 200 degrees C. Put all ingredients in a large roasting pan and mix well. Roast for 45 minutes stirring about halfway through the cooking time. Remove the tomato mixture from the oven and allow it to cool. Remove garlic cloves and once they are cool enough, squeeze the clove extracting the roasted garlic into the tomato mixture and discarding the exterior. Using a immersion blender or food processor, pulse the mixture into a sauce.
I cooked a bit of pasta and froze the remaining sauce.
And the end result was delicious but I still do not want to see the summer weather end…..maybe I will make one more batch.
