One of those days when only a tropical feeling cocktail will do. Not because the weather called for it but almost because the weather did not call for it.
I wanted a herbaceous kick to the drink so went with thyme.
150 ml, Pineapple juice
50 ml, Thyme simple syrup, recipe below
75 ml, Rum
25 ml, Grand Marnier
Thyme simple syrup
Thyme, handful of sprigs
1 part, sugar
3 parts, water
Steep thyme in boiling or just boiled water and sugar and leave to infuse for at least 30 minutes. Remove thyme. If there is time, cool or refrigerate syrup before mixing. Note: You can make and refrigerate this for several days….one step closer to tomorrow’s cocktail.
Add ingredients with ice in a cocktail shaker and “shake it all about”.
Strain into a beautiful glass. Enjoy!!
