Life seems to stay busy. For years, I would say, “it is so busy right now” or “this time of year is hectic”. Then, I realised I was saying it and hearing it from others incessantly. So since life is, as established, busy, I try to find recipes I can prep the day or night before and just throw in the oven when I race in from work and/or the gym.
This is one of those recipes and it seems to get better the longer it is marinated.
8 chicken thighs with skin on, washed
3 tbsp, Dijon mustard
1 tbsp, whole-grain Dijon mustard
1 tbsp, honey
3 tbsp, olive oil
Juice from 1 lemon
3 heaping tbsp tarragon
Salt and pepper
Mix ingredients above and let marinate for as long as possible. I often leave overnight.
Preheat oven to 180 degrees Celsius. Bake for 45 minutes.
Enjoy! Serve with Roasted Asparagus or Fennel and Orange Salad.
